Yesterday was very exciting! Out of the blue my boyfriend surprised me with a brand new camera so that I can take better pictures for my blog. I have already started playing with the camera a bit and I have to agree that it takes WAY better pictures than my phone. So if you notice any improvements to my photos in the next few weeks, you’ll know why!
Back to the baking…
As I was brainstorming ways to use up all of the apples I picked, I decided I wanted to make something different than the usual pies and crumbles. I recently cleaned and organized my baking supplies and came across a bundt pan that I hadn’t used in years. I decided to dust it off and started my search for an apple bundt cake recipe.
I immediately stumbled upon a cream cheese apple bundt cake. I am not a huge fan of cream cheese in my baked goods, so I opted to leave that out. Instead, I made a maple glaze that is OUT OF THIS WORLD! Seriously, I could drink this glaze straight from the bowl. Not to mention how much fun it was to pour over the cake and watch it drip down the sides.
The result I ended up with is literally Fall in a bite. This is the absolute perfect piece of cake to eat along with a piping hot cup of coffee as you are curled up reading a book on a rainy afternoon. Hints of cinnamon, nutmeg and allspice are present but not overwhelming and there are large pieces of fresh apple in every bite. The maple glaze adds the perfect sweetness and crunch. Don’t you want to go bake this right now?
You could add the cream cheese swirl and the pecans from the original recipe, but I think it is perfect just as it is.
Apple Bundt Cake with Maple Glaze
3 cups all-purpose flour
3/4 cup granulated sugar
1 cup packed light brown sugar
2 tsp. ground cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. ground nutmeg
1/2 tsp. ground allspice
3 large eggs, lightly beaten
3/4 cup canola oil
3/4 cup unsweetened applesauce
1 tsp. vanilla extract
3 cups peeled and chopped Gala apples (2-3 medium apples)
2 tbsp. unsalted butter
1 1/4 cups powdered sugar
1 tsp. vanilla extract
1 Tbsp. maple syrup
1-2 Tbsp. water
Preheat oven to 350 degrees F and grease a 12 or 14 cup bundt pan. Whisk the flour, sugars, cinnamon, nutmeg, salt, baking soda and allspice together in a bowl.
Add the eggs, oil, applesauce and vanilla and mix until combined. Fold in the chopped apples and pour into the pan. Bake about 60 minutes, or until a toothpick comes out clean.
Allow the cake to cool completely to room temperature before removing from the pan and making the glaze.
To make the glaze, melt the butter in a saucepan. Add the powdered sugar, vanilla and maple syrup. Then add water a tablespoon at a time until you get your desired consistency. You can always add more powdered sugar if you add too much water.
When the glaze is ready, drizzle it over the cake and it should set within a few minutes.
