Welcome to the new Dessert Chronicles! Have you explored the recent site changes?! I am so happy with how everything came out. I was ready for a change and wanted to make the site a bit more user friendly by adding a recipe index page complete with pictures (to get there click recipes up at the top). What better way to celebrate the new and improved look than with peanut butter and chocolate? I made these around the holidays for gifts, but I am just getting around to posting them. The winter weather we are finally getting calls for some cookie baking anyways.
When people find out I blog about desserts, they almost always ask me what my favorite thing is to bake. Honestly, EVERYTHING, but if I have to pick, cookies. Cookies are just so simple to make, and there is pretty much nothing better than a warm cookie right out of the oven. I feel like I cycle through the same cookie recipes all the time though, so I try to mix it up every once in awhile. While I have made peanut butter cookies countless times, I have surprisingly never dipped them in chocolate. I was totally missing out! Just one added step makes these cookies a bit fancier and definitely more fun to eat! I sprinkled the final product with chopped peanuts, but you could use any kind of nut or candy. Even chopped peanut butter cups would work if you want to get crazy.
- 1 1/4 cups all-purpose flour
- 1/3 cup granulated sugar
- 1/4 tsp. salt
- 1/2 cup unsalted butter, room temperature
- 1/3 cup smooth peanut butter
- 2 egg yolks, room temperature
- 8 oz. semisweet chocolate
- Crushed peanuts, optional
- Preheat oven to 350 degrees F. In the bowl of a stand mixer fitted with a paddle attachment, combine flour, sugar and salt on low speed for about thirty seconds. Add butter, peanut butter and egg yolks and mix on low speed until a dough forms. Drop rounded 1-2 Tbsp. portions of dough onto a baking sheet. Use a fork to make a criss cross pattern on each cookie, flattening them slightly. Bake for 10-12 minutes, until the cookies are set and just slightly golden brown.
- While cookies are cooling, melt chocolate in a glass bowl set over a pot of boiling water. Once cookies have completely cooled, dip half of each cookie into the chocolate. Sprinkle with crushed peanuts, if desired, and allow chocolate to set. You can place the cookies in the fridge to speed up this process.
- Makes 12-18 cookies, depending on how big you make them.
