Today’s recipe involves so few steps and ingredients that I’m not even sure if it qualifies as a recipe, but who doesn’t want a dessert that they can whip up in a matter of minutes?! If you’re as obsessed with Trader Joes as I am, then you may be a fan of their Fireworks Chocolate Bars. The chocolate is full of Pop Rocks candy from your childhood that fizzes and crackles in your mouth with every bite. I decided awhile ago that I wanted to make a homemade Fourth of July version of this fun candy bar, but who knew how hard it would be to locate a packet of Pop Rocks these days??
Luckily, I finally found some at a local old-school candy store and immediately got to work melting massive amounts of chocolate. You can definitely enjoy this bark with just melted dark chocolate and Pop Rocks, but I had to go and trash it up some more. Some red, white and blue white chocolate and sprinkles made this a bit more patriotic and festive for the upcoming holiday. Flinging white chocolate all over the place was pretty therapeutic too. You could literally add ANYTHING to this chocolate bark. Go crazy with candy, chopped pretzels, nuts…whatever makes you happy. It will stay fresh in the fridge for a fairly long time, so make a large batch this weekend and you’ll have a secret chocolate stash all summer long.
- 1 lb. semisweet chocolate
- 1 lb. dark chocolate
- 8 oz. white chocolate
- Pop Rocks candy
- Food coloring
- optional: other candy, nuts etc.
- In a glass bowl set over a pot of simmering water, melt the semisweet and dark chocolate until smooth. Line a cookie sheet with non-stick foil and pour the melted chocolate evenly on top. Spread it out into an even rectangle, leaving a 1-inch border of foil between the edges of the rectangle and the edge of the pan. Sprinkle Pop Rocks and sprinkles on top (and any other candy or nuts you may want to add) and place in the fridge, until the chocolate is set. When the chocolate is almost hardened, start melting the white chocolate in a glass bowl set over a pot of simmering water. Divide the melted white chocolate into three bowls and dye one bowl red and another blue. Take a small spoon and drizzle the white chocolate all over the hardened chocolate from the fridge. Add more Pop Rocks and sprinkles and place back into the fridge to set again. Once the entire slab has hardened (about 1-2 hours), break the slab up into irregular pieces and enjoy! Store the rest in the fridge.
