I know, I know. This isn’t a dessert, but I promise it tastes good despite its unappealing color. I figured January was the perfect time to share how I balance my crazy sweet tooth. This smoothie is packed with nutrients and vitamins, but with the natural sweetness of the fruit, you won’t even know that it’s good for you. I try to have one of these every morning to at least start my day on a healthy note, even if it all goes downhill from there. After all the sugar I ate in December, I was seriously craving spinach smoothies. This is the perfect breakfast or snack for any time of year, but especially for right now when most of us are recovering from the sugar induced comas of the holiday season.
I blend banana, spinach, strawberries and lemon to create this smoothie, but you can really add anything that you like. Sometimes I use kale instead of the spinach, but I do find that you can taste the kale somewhat. The spinach, on the other hand, is easily overpowered by the banana and strawberries. I tend to use fresh fruit, but you can definitely use frozen. Frozen fruit creates more of an icy smoothie, but adding a few ice cubes along with fresh fruit will create the same effect. I also add ground flax seed and chia seeds to my smoothie for additional nutrition. I have never used protein powder, but I’m sure that would be great to add as well. Especially, if you want to make the smoothie more filling.
I know you’re probably skeptical about drinking a spinach smoothie, but trust me, this recipe is actually delicious. Go give it a try and see what you think!
Yield: 1 serving
2 large handfuls of fresh spinach
Juice from 1/2 lemon
1/4 cup water
1 Tbsp. ground flax seeds (optional)
1 Tbsp. chia seeds (optional)
Add first five ingredients to a blender and blend for a minute or two, until everything is combined and smooth. Then add in flax seeds and chia seeds, if using, and blend for another 15-20 seconds. Enjoy!
