I guess I’m all about easy desserts right now because I’m back with another super simple recipe that is sure to become an instant favorite. Not that summer peaches need any doctoring, but a little vanilla ice cream and granola just makes everything better. I love throwing fruit on the grill in the summer. It’s a fun addition to any summer dinner…no bowls required. I made these a few months back when peaches weren’t even in season, so they’re guaranteed to be even better now that it’s almost August!
Peach crisp is a summer staple around here, but this is a perfect healthier alternative to whip up after a long beach day, or one too many stops at the Mr. Softee truck. The granola may not be necessary, but I seem to always have granola around and loved the added crunch. Once the ice cream hits the hot peach, it instantly melts into a gooey mess that is the perfect end to a hot summer day.
- Vanilla ice cream or frozen yogurt
- Store bought or homemade granola
- Cut the peaches in half and remove pits. Brush cut side with olive oil and place onto hot grill, cut side down. Leave on grill for 5-7 minutes, until peaches are warmed and show grill marks. Top with vanilla ice cream and granola and serve!
