It’s August and since I start Dental School in just a couple of weeks, I am making the most of these last days of Summer by indulging in extra chocolate and ice cream. Why bother choosing between a brownie, cookie and ice cream, when you can have them all?! I apologize in advance for shoving this in your face, but it was just too good not to share! Bikini season is almost over anyway, right?
These ice cream sandwiches are pretty much the BEST THING EVER! Rich fudgy brownie is layered with vanilla ice cream and then topped with chocolate chip cookie, so how could you go wrong? If you wanted, you could even serve this as an ice cream cake and skip cutting these into squares. It would definitely be the ultimate birthday cake. I had to call these “Half Baked” because they remind me so much of Ben and Jerry’s Half Baked ice cream with the brownie and chocolate chip cookie combination. These take a little more effort than buying a pint of Ben and Jerry’s, but they are so worth it! The brownie and cookie layers are super easy one bowl recipes and I saved time by using softened store bought ice cream for the center. I stacked all of the layers in a 9 x 9″ pan and then covered them and froze the bars overnight. The best part is that these last in the freezer for weeks! Just hide your secret stash so no one else gets to them first!
Half Baked Ice Cream Sandwiches
Yield: 9 sandwiches, size shown above
1 1/4 cup all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1 stick unsalted butter, melted
1/4 cup + 2 Tbsp. light brown sugar, packed
1/4 cup + 2 Tbsp. granulated sugar
1 large egg
1/2 tsp. vanilla extract
1 cup semi-sweet chocolate chips
10 Tbsp. unsalted butter
3/4 cup granulated sugar
3/4 cup unsweetened cocoa powder
1/2 tsp. salt
2 tsp. vanilla extract
2 large eggs
1/2 cup all-purpose flour
1 Quart of vanilla ice cream (or any other flavor), softened to spreadable consistency
Line two square 9 x 9 inch baking pans with parchment paper, so that the paper sticks over all sides and is easy to remove later. Preheat oven to 375 degrees F to make cookie layer first.
In a large bowl, combine melted butter, sugars and vanilla. Then add egg. Then add flour, baking soda and salt and mix until well combined. Finally, add chocolate chips and spread batter into pan. Bake for about 15 minutes, or until golden brown and a toothpick comes out clean. It is better to undercook this layer as it will cook a bit more once out of the oven.
To make brownie layer, turn oven down to 350 degrees F. Melt the butter in a saucepan over medium-high heat. Once melted, remove from the heat and whisk in granulated sugar and cocoa powder until dissolved. Then add the salt, vanilla extract and eggs and whisk until combined. Add the flour and mix until incorporated. Pour batter into second pan lined with parchment paper and bake 20-22 minutes, or until a toothpick comes out clean.
Allow the cookie and brownie layers to cool completely. You can place them in the freezer to speed up the process. Once the layers are cold you are ready to assemble. Start with your brownie layer in a 9 x 9″ pan. Spread the softened ice cream on top evenly. Then place the cookie layer on top of the ice cream and press down slightly. Cover the pan with foil and freeze for at least 4 hours. Once frozen, it is easiest to cut into squares.
