Have you ever had a poptail? Are you wondering what that even is? If you aren’t an avid Pinterest follower, you may not be aware of the latest craze that is the popsicle cocktail! I’m pretty sure the concept has actually been around for awhile, but I’m going to pretend it’s brand new because I can’t believe I haven’t tried it until now. Who wouldn’t want to dunk their popsicle right into their cocktail!?(Especially if you are double fisting them and need a free hand).
It was nearly impossible to choose my popsicle/cocktail combo, but I eventually landed on mango popsicles dunked in prosecco. The best part is that as the popsicle melts into your drink, you instantly have a mango bellini. I don’t know that I’ve ever had the option of ordering a mango bellini before, but I am going to start making them often because these were amazing.
The only downside to making popsicles is that you have to plan ahead, since they require some overnight freezing time. Luckily, you now have the entire week to make endless popsicles and come Friday at 5:00, you too can enjoy a fun and summery cocktail.
- 2 mangos, peeled and chopped
- 1/4 cup honey (alter according to taste, based on how sweet your mangos are)
- About 1 cup water
- Process mangos in food processor. Add honey a little at a time, according to taste. You may need less or more based on how sweet your mangos are. Add water slowly until the mixture has a pourable consistency. You may not use all of the water. Pour mixture into popsicle molds and freeze according to package instructions. Pour prosecco, add a popsicle and enjoy.
