Happy Monday! I hope everyone had a great weekend. Today I am sharing a quick and easy breakfast treat that is sure to make the beginning of your week a little bit better. I recently realized that I had never made granola and knew that had to change. I had no idea how easy it is to make your own granola and now I am excited to create many different variations.
This version uses a lot of cinnamon and raisins, but feel free to add any dried fruit or nuts that you like. I personally can’t wait to experiment with coconut and dark chocolate. Would that be acceptable to eat for breakfast? I think so. In case you’re the type of person that can’t eat anything sweet in the morning (you should reconsider that), this granola layered with yogurt and fresh fruit in a tall glass makes an amazing afternoon snack.

Maple Cinnamon Raisin Granola
Yield: about 4 cups
2 1/4 cups old-fashioned rolled oats
1 Tbsp. cinnamon
4 Tbsp. ground flaxseed
3/4 cup slivered almonds, or another type of nut
1/2 cup maple syrup
2 Tbsp. + 2 tsp. coconut oil, melted on the stove or in the microwave
3/4 cup raisins
Line a baking sheet with parchment paper or non-stick aluminum foil and preheat oven to 325 degrees F.
Combine all ingredients except for raisins in a bowl.
Spread onto the baking sheet in one even layer.
Bake 20 minutes and then stir granola with a spatula. Bake another 20 minutes, watching closely towards the end to ensure it doesn’t burn.
Once the granola is done, add the raisins. Allow granola to cool completely before storing. It can be stored at room temperature for a month or frozen for longer.
