Remember those M&M cookies I shared last week? I sandwiched two of them around a thick layer of homemade vanilla ice cream to create the ultimate ice cream sandwich. This is one of my favorite desserts in the summer. After tasting how well the M&M cookies turned out, I couldn’t help but add some ice cream, even in the middle of winter.
I used David Lebovitz’s recipe for vanilla ice cream, which is awesome. You can obviously use store bought ice cream too. If you do choose to make your own ice cream, I will warn you that it is a somewhat lengthy process. The ice cream really needs to set in the freezer overnight before being scooped onto a cookie. I was impatient and attempted to scoop the ice cream onto the cookies several times before I gave up and waited until the next day. Once the ice cream has set overnight it still seems to soften more quickly than store bought ice cream, so you have to work fast! I usually fill a cookie, then wrap it in plastic wrap and stick it right in the freezer. If the ice cream softens too much, you can always pop it back in the freezer for 10 minutes or so.
I made these for dessert during the Super Bowl and they were amazing! About halfway through eating the sandwich, the cookies get soft and almost doughy. So soooo good!! You definitely need to treat yourself and make a batch of these. Maybe eating ice cream will make summer come sooner.
