When I looked at this month’s mystery dish ingredients, I immediately knew what I wanted to make. I was in the mood to make a fun and colorful dessert after making the flower cupcakes that I posted on Monday. I have wanted to make these cupcakes for a long time and with this month’s ingredients and Easter around the corner, it was perfect timing. We had to use three ingredients from the following list: boxed cake mix, Peeps, oats, ginger, honey, wine, shallots, coconut, shrimp, cherry tomatoes, kiwi, dried fruit and cinnamon.
This is more of a fun idea than a recipe, but it is easy and festive for Easter, or Spring in general. I am not a huge fan of Peeps, just because I don’t love eating straight marshmallows, but you have to admit they are pretty cute. Even the ones that have crazy, odd placed eyes. While you could definitely use any recipe you wanted for the cupcake and icing, I used funfetti cake mix as one of my three ingredients from the list. I then frosted the cupcakes with my favorite vanilla buttercream and topped them with coconut that I dyed green. To dye the coconut I just threw on disposable gloves and used my hands to incorporate a drop or two of green food coloring into a cup of unsweetened shredded coconut. I then used a dollop of icing to stick the Peep onto the coconut and added two pretzel M&Ms to look like eggs. That’s it!
