Creamy, refreshing, AND guilt-free. This is definitely a dessert that you can indulge in more than once in awhile. With just four ingredients, this peach frozen yogurt can be made in minutes, no ice cream maker required! Have I sold you yet? I am not normally a fan of fruit flavored frozen yogurts or ice creams, but after recently trying soft serve fruit in NYC, I was hooked. If you’re not familiar, soft serve fruit is essentially frozen fruit blended until is has a frozen yogurt like consistency. The first time I added frozen bananas to my food processor, I was amazed. Plain, frozen fruit turned into soft serve yogurt almost instantly!
This peach frozen yogurt worked the same way and I think I like it even more than the banana variation. This version even has a dose of protein and extra creaminess due to the addition of greek yogurt. While this will never completely replace ice cream, it is the perfect healthy alternative and I promise you will still feel like you are indulging a bit. It is delicious on its own, but also amazing topped with fresh fruit and granola. I love the peach flavor so much that I haven’t tried other fruits, but you could swap the peaches for just about anything. Strawberries, mango, pineapple etc. would all work. If you’ve been trying to cut back on the s’mores and ice cream lately, at least you can still enjoy the best treats of the summer!
- 16 oz. frozen peaches (about 4 cups)
- 1/4 cup honey
- 1/2 cup low fat or fat free greek yogurt
- 1 tsp. fresh lemon juice
- Process all ingredients in a food processor until the frozen yogurt is smooth and thick. This can take up to ten minutes and you may need to stop every so often and push the mixture around with a spoon to help it combine.
- Eat as is, or allow it to harden more in the freezer. It is best after about 20 minutes. Store the remainder in the freezer and let it thaw to a more yogurt like consistency each time you want to enjoy it!
