Are you sick of all that summer fruit and begging for some chocolate? Well, maybe it’s impossible to be sick of the fruit, but I can always go for some chocolate. The moment I laid eyes on these on Joy the Baker I was sold. Peanut butter is sandwiched between two banana slices and the entire thing is dunked in warm, melted chocolate. I mean, seriously, is there a better combination?! This is the simplest creation and the best part is that it doesn’t even require an oven!
To create the bonbons, sandwich two banana slices with peanut butter and then very gently push a pretzel stick through the center of your banana sandwich. The bananas may crack, but the chocolate will cover that anyways. You can definitely use popsicle sticks instead of pretzel sticks, but I figured why not make the entire thing edible?
I will warn that the pretzel sticks lose their crunch pretty quickly in the freezer, so it is best to eat them fairly quickly. After dipping the sandwiches in melted chocolate, I added crushed pretzels for extra saltiness. I initially placed the bonbons in the freezer, but I actually prefer the texture of them straight from the fridge. Either way, they are the perfect sweet and salty bite to satisfy any chocolate craving!
Peanut Butter Banana Bonbons
Yield: about 24
about 1/2 cup peanut butter
10 ounces semisweet chocolate chips
2 Tbsp. coconut oil
Peel bananas and slice them about 1/3 inch thick.
Use a small spoon to add about 1 teaspoon of peanut butter on top of half of the banana slices (you could also use a pastry bag for this). Top each peanut butter banana slice with a plain banana slice. Then gently push a pretzel stick through the center of each sandwich.
Place the banana sandwiches onto a parchment lined baking sheet and place in the freezer for about 30 minutes.
While the sandwiches harden, melt the chocolate and coconut oil in a bowl set over a pot of simmering water or use the microwave in 30 second intervals.
Dip the hardened banana sandwiches into the chocolate and coat completely. Use a spoon to help with this. Then place them back on the baking sheet and immediately top with crushed pretzels. Return the bonbons to the freezer for at least two hours before eating and then the extras can stay in the freezer or the fridge.
