It’s officially summer and about time I broke my popsicle mold in! I have a long list of popsicles that I want to make, but I figured I couldn’t go wrong with berries and booze. I recently rediscovered how much I love mojitos and when I had an incredible blackberry flavored one a few weeks ago, I immediately imagined it in popsicle form.
While I’m sure blackberries would be amazing in this recipe, I had two containers of strawberries in my fridge that were almost past their prime. This strawberry version is perfect and I imagine I’ll be making a new batch with blueberries once blueberry season starts next week.
This recipe is perfect for summer with only about 5 minutes of prep time and no oven involved. The ingredients are blended together and poured into the molds and then you just have to be patient while they freeze. I used 1/4 cup of fresh mint leaves the first time around and I found it to be a bit too overpowering, so I recommend using only 1/8 cup. I will also warn you that these taste more alcoholic than sweet. I tried to keep the sugar down by only using 1 ½ tablespoons of sugar, but you could definitely add sugar or experiment with other sweeteners if you are looking for a different taste.
These popsicles are a great way to celebrate summer and an awesome twist on your average cocktail. Just make sure to make a different version for the kids!
Strawberry Mojito Popsicles
Yield: 6-8 popsicles, depending on size of mold
1 lb. strawberries
1/8 cup fresh mint leaves
zest from 1 lime
1 1/2 Tablespoons granulated sugar
1/2 cup hot water
1/2 cup Rum
Add strawberries, zest and mint into a food processor and pulse until smooth. Combine the sugar and hot water and mix until the sugar is dissolved. Add the hot water and the rum to the strawberry mixture and pulse until combined. Pour into popsicle molds and freeze until solid. Use foil to help keep your popsicle sticks in place, or freeze the popsicles for 30 minutes before adding the popsicle sticks.
