I’m not going to lie. When I saw this month’s mystery dish ingredients, I had absolutely no clue what to make. The list included fresh mushrooms, pork, spinach, cream cheese, pineapple, butterscotch chips, macadamia nuts, Siracha, Ritz Crackers and tortillas. Between Valentine’s Day and the cold weather, I have had my fair share of sweets lately and I wanted to make something at least somewhat healthy. I was hesitant to post another green smoothie, since I posted one recently, but I thought that this would be a fun variation on the recipe that I shared. A mix of mango, pineapple, banana, spinach and vanilla almond milk make this a refreshing snack that momentarily makes you believe you are lying on the beach somewhere warm. Again, I know it doesn’t exactly look appetizing, but I promise it is delicious.

Unsweetened vanilla almond milk is one of my new favorite things and it is a great addition to smoothies. Since I used fresh pineapple and fresh mango, I added a frozen banana to achieve a thicker consistency. Any time you have too many overripe bananas on your counter, slice some of them up and throw them in the freezer so that there are always frozen bananas available when your smoothie craving strikes!

Tropical Green Smoothie

Yield: 1 large smoothie

Ingredients:

3/4 cup diced pineapple

3/4 cup diced mango

1 cup spinach

1 cup vanilla unsweetened almond milk

1 frozen banana

optional: sprinkle of chia and flax seeds

Instructions:

Add all ingredients to blender and blend until thoroughly combined.

    Ok I am kind of embarrassed to admit, whenever I put ripe bananas in the freezer, I only ever take them out to make banana bread. It has never once occurred to me to use them in a smoothie. Oh my goodness, you just made my life easier. Love the sound of this tropical smoothie, perhaps we’ll enjoy it this weekend during our big snowstorm and imagine the warmer weather :)

      Haha. I am so glad I have made your life easier! Banana bread is awesome, but it’s great to have extra bananas always available for smoothies too. I hope you make one and dream of being somewhere warm :-)
